The wine is made from a mixture of 70% Grillo and 30% Viognier. Grillo grape is an ingredient in local Sicilian wine blends. The grillo is well adapted to withstand the heat of Sicily and is best known as Marsala, a Sicilian fortified wine. Here, Grillo gives the wine fresh acidity and invigorates the richness and texture of Viognier. Viognier comes with lovely floral aromas and stone fruit flavors. Together, the two grapes create a balanced and engaging wine that can be enjoyed with fish in tomato sauce, such as the traditional Sicilian Tonno Alla Ghiotta.
