Grape varieties: Grenache gris 85%, Carignan gris 5%. Grenache blanc 5%, Carignan blanc 5%. From a single planted plot, old vines at altitude (300m), south-east orientation, protected from the setting sun. Vine planted in 1936. Manual harvest. Direct pressing, fermentation in barrels, aging for 8 months on lees, stirring every day during fermentation and then once a week until December. Long aging possible but a lot of pleasure to drink it from its youth. Food / wine pairing: shellfish, sautéed veal with lemon, sea bream with tarragon, sea urchin
