Grapes: Grenache gris 90%, grenache blanc 10%. Pressing: direct, fermentation in barrels, aging for 8 months on lees, stirring every day during fermentation then once a week until December, bottling in spring. Aromas of white fruits with iodized and aniseed notes, dense and saline palate, freshness and minerality. Storage: long aging possible but a lot of pleasure to drink it from its youth. Food / wine pairing: fish, white meat, hard cheese (cow or sheep milk).
