Wine from Fabien Jouves made over at his stunning vineyard that lies between the limestone clay hillsides of the Cahors and Quercy wine regions. He is renowned worldwide for producing biodynamic wines that really boast the best attributes of their unique terroir. By implementing stellar and planetary rhythms into his farming methods, soil quality is increased hugely. The result is a selection of wines that shine with personality.
The Soif D'Aillerurs is made from a manually harvested field blend of grapes (the three Grenaches, Clairette, Counoise, Cinsault, Muscat de Hambourg, Malbec) that are then pressed in entire bunches. Fermentation occurs in huge concrete vats over 7-days before bottling after 6-months without any
oenological inputs. With no fining, no filtration and very minimal sulphite addition, this is a truly delicious example of great natural red wine! This is a light red wine in both mouthfeel and colour. It's floral, fruity and dangerously drinkable when the sun comes out.
